Madame Arnulfi’s home and perfume factory, supposedly at Grauss, France’s cradle of perfume, was filmed at Castell de Sant Ferran, as were Grimalfi’s tannery and the Paris city gates when Grenouille returns after the orgy-execution scene and passes over the Sant Ferran drawbridge.
Its unfinished church was used for the leather workshop scenes, and the old stables were another workshop, where patient peasants sat sorting petals. It was also Grenouille’s cell before his failed execution.
The parade ground also became a set showing the streets of Paris as Grenouille follows his nose to Dustin Hoffman’s perfume shop.
